A mildly spiced curry with a hint of mango. Preparation time: 10 Minutes Cooking time: 10 Minutes Nutrition per serving: 379 cals, 8.3g fat, of which 1.65g saturated fat, 16.2g added sugar, 1.18g salt 1 tablespoon vegetable oil 1 red onion, peeled and sliced 1 red pepper, deseeded and sliced 350g thick-sliced carvery turkey from the deli counter, cut into bitesized pieces 1 small courgette, sliced 1 tablespoon Goan masala paste 1 x 400ml tin coconut milk 1½ tablespoons mango chutney 1 x 100g bag baby leaf spinach Juice of ½ lime steamed basmati rice, to serve Method 1. Heat the oil in a large, deep frying pan. 2. Add the onion and pepper and stir-fry for 3 minutes. 3. Add the turkey, courgette, masala paste, coconut milk and chutney, and gently simmer for 5 minutes. Stir through the spinach until wilted. 4. Squeeze in the lime juice and season with salt and freshly ground black pepper. Serve with steamed rice.
